Liquid Alternatives
You need to remember that if your recipe mentions to add a certain amount of
water, this can be altered to include any of the following super alternatives:-
- Milk
- Eggs
- Water that has been used to boil vegetables
- Stock
- Oil
- Buttermilk
- Beer
- Wine
- Juice
- Sour Cream
- Yoghurt
- Cottage Cheese
- Ricotta Cheese
- Apple Sauce
- Honey
Bread made with only water will have a crispier crust that using any of the
alternatives above however extra flavour can be obtained by adding something
different. Remember to adjust your water accordingly. Pure liquid
replacement should be a direct swap for water. For example if your recipe calls
for 300 mls water and you wanted to make a substitute you would do the following
100 mls of Milk 200 mls of water.
If you are using a mashed vegetable in your recipe, (either potato or pumpkin
are great to add in,) you need to make the following adjustment. If you are
adding 200 grams of pumpkin 100 grams (100 mls of water will need to be deducted
from your recipe.)
Great Add In for your breads
The list is almost endless of what you can add into your bread mixes, we have
found that the best results are those where the add in quantity is kept
relatively small in comparison to the total weight of the flour. Here are
some ideas:-
- Wheat Bran
- Wheat Germ
- Bran Flakes
- All Bran
- Cornmeal
- Millet
- Oatmeal
- Rolled Oats
- Oat Flour
- Rye Berries
- Amaranth Flour
- Barley Flour
- Buckwheat Flour
- Corn flour
- Potato Flour
- Rice Flour
- Soybean Flour
- All herbs and Spices including peppers
- All vegetables in small quantities
- Dried Fruit
- All types of Seeds
- All types of nuts
- Fruit - Pineapple, Banana, Apple seem to give the best results
- Pesto's
- Garlic
- Sun Dried Tomato
- Cheeses
Remember to use your imagination and what is in your pantry. I find it
a great way of getting my children to eat bran, vegetables and other things
which they think are not good for them.
