Back to TopBakers Flour Rye This high fiber flour lends natural sweetness to all your baking. A quick tip: Don't sift barley flour or you will lose important nutrients. This is ground from pearled-hulled barley kernels, bolted into a flour. Traditionally a lower gluten flour, use for muffins and lend flavor to your favorite bread mixtures, but only substitute 1/2 cup to your favorite pre-existing recipes. A wheat flour with the starch removed, ground from spring or winter wheat which is high in gluten. All gluten products (as well as soy flours) should be stored refrigerated or frozen as they are natural products (no preservatives and a full-fat profile) and can therefore become rancid.
